Winemaking : pressing at harvest with a pneumatic press, settling in stainless vats and fermentation in an egg-shape vat. Matured between 10 to 12 months in the egg-shape vat.

Serving temperature : 10°C/12°C

A selective harvest for this cuvée, created from the blending of our ovoid vats and amphorae. This Pouilly Fumé is aged on fine lees for 10 months. This vinification process adds complexity to the wine and a beautiful aromatic power.

It will pair particularly well with white meats in sauce (chicken with morel mushrooms in cream), veal blanquette, as well as with seared foie gras.
